Featured panelists Elizabeth Garner, Kat Papenbrock, Dr. Michael Seman, Greg Thomason, and Dr. Stephan Weiler discuss the challenges in economic innovation faced by Rural Colorado, never more so than during the COVID era. Although cities were hit hardest first, now rural areas are proportionally suffering the worst impacts. This community conversation explores the challenges and opportunities created by this public health crisis through short presentations about leveraging local and regional assets to maximize innovation and resiliency to generate inclusive growth in rural community economies, followed by discussion and audience Q&A.

These estimates are customized for Colorado based on a national economic impact assessment compiled by Dawn Thilmany, Becca Jablonski, Debra Tropp, Blake Angelo, and Sarah Low at the request of a national food system collaboration, the National Sustainable Ag Coalition to inform current stimulus policy formation.

Survey reveals how pandemic has changed consumers’ food habits
The team co-led by CSU food systems researchers Dawn Thilmany and Becca Jablonski conducted a national survey of 5,000 U.S. households this past fall. Their goal was to uncover how the pandemic is changing Americans’ food choices and try to understand if some of those changes might remain post-pandemic. That way, producers, farmers, ranchers, retailers and restaurants can adapt accordingly and focus on long-term resilience. Project Website
